Finding a way to incorporate ingredients I love into dishes is my favorite way to develop new recipes. I’ve been snacking on black grapes all month so it was only a matter of time before I thought up a way to cook with them. In terms of flavor, black grapes are sweeter and richer with a much more subtle hit of tang. They also tend to be crunchy and firm when ripe.
I frequently braise meat in wine, so why not grapes? This recipe takes time but, there are not a lot of active steps. Once you've made the marinade, you're just playing the waiting game. It's a great beginner-friendly meat dish with deep layers of rich flavor. It got an actual round of applause at my last family dinner party!
