Last week’s midnight dinner took one of my favorite late-night snacks and upped the anti. I didn’t think I could make chicken quesadillas (one of my favorite foods) any better — but the addition of sweet plantains, spicy black beans, and lots of warm spices proved me wrong.
This is a dinner recipe I cannot wait to repeat. It’s simple but so delicious.
