Caribbean Summer Sangria

I want to introduce you to my favorite summer drink right now. It’s juicy, tropical, refreshing, and somehow tastes like vacation in a glass. It has quickly become my go-to drink when I have the girls over because people just can’t seem to get enough of it.
If you’re like me, you probably have friends who drink and some who don’t, so you want something that works for everyone. This is that drink. It’s flexible, unfussy, and you can easily make it with or without alcohol. It gets better the longer it sits.
This is a bright, sparkling and tropical, fruit-forward sangria. It’s built on ripe fruit, pineapple juice, and citrus soda, then finished right before serving with a fizzy pour of San Pellegrino. You can keep it alcohol-free or turn it into a cocktail at the end, either way, it hits.
Ingredients
32 oz pineapple juice
1 whole cantaloupe, cut into small cubes (ripe)
1 whole pineapple, cut into small cubes (ripe)
2 mangoes, cut into small cubes (ripe)
2 cans San Pellegrino Aranciata (Orange), added just before serving
2 cans San Pellegrino Melograno & Arancia (Pomegranate Orange), added just before serving
Optional for serving
Sparkling wine, I like a sparking Rose in this one (for alcoholic version)
Sparkling water (for mocktail version)
Instructions
Add the pineapple juice to a large pitcher or drink dispenser.
Add the cubed cantaloupe, pineapple, and mango and two of the soda cans. Stir to combine, then cover and refrigerate for at least 4 hours, ideally overnight.
When you’re ready to serve, add the remaining San Pellegrino cans right before serving to keep the drink bright and fizzy.
Spoon some of the fruit into each glass, then pour over the chilled sangria base.
Finish with sparkling wine for a cocktail version or sparkling water for a lighter mocktail version.
Notes
The longer this sits, the better it gets. Overnight is ideal because the fruit almost “melts” into the pineapple juice and becomes part of the drink itself.
Always add the sparkling sodas at the very end so you don’t lose that fizz.
This is one of those drinks that works just as beautifully without alcohol as it does with it, which is exactly why it stays on repeat for gatherings where everyone is drinking something different.
