Chocolate Horchata Roll
Rich, Fluffy, Decadent.
This is how I turn one of my favorite drinks into a dessert. Rich and creamy horchata has always been a favorite treat of mine, and since cinnamon is such a natural part of it, turning those flavors into cinnamon rolls only felt right. This recipe is a luscious, decadent treat that I brought with me on my latest trip as the ultimate plane snack. All the details are waiting for you below. Ingredients
1 cup whole milk, warmed to 100–110°F
2 ¼ teaspoons (1 packet) active dry yeast
½ cup brown sugar
1 whole egg + 1 egg yolk
1 tablespoon vanilla extract
4 cups all-purpose flour
½ cup dark cocoa powder, sifted
1 teaspoon kosher salt
½ stick butter, room temperature
Filling
½ stick butter, room temperature
2 tablespoons dark cocoa powder
2 teaspoons ground cinnamon
½ cup dark brown sugar
1 teaspoon vanilla extract
1–2 tablespoons horchata (to loosen slightly if needed)
Glaze
1 cup powdered sugar, sifted
¼ cup cocoa powder, sifted
1 teaspoon vanilla
About 4 tablespoons milk, until smooth and spreadable
Heavy cream
Instructions
Add warm milk to a mixing bowl and sprinkle the yeast on top. Let it sit for 5–10 minutes until foamy.
Stir in the brown sugar, egg, egg yolk, and vanilla.
Add the flour and salt, then sift in the cocoa powder. Add the butter.
Mix with a dough hook on medium-low for 6–7 minutes. It should be sticky, but form a soft ball. Scrape down the sides of the bowl as it mixes.
Cover and let the dough rise for 60–90 minutes.
Roll the dough out into a large rectangle on a floured surface.
Mix together the filling and spread it all over the dough. Roll it up tightly into a log and cut into 9–12 pieces.
I use a piece of floss to get tight, even cuts!
Place the rolls in a 9x13 baking dish and let them rise for another 60–90 minutes. Spoon about ½ tablespoon of heavy cream on each roll to help them fluff up in the oven.
Bake at 350°F for 30–35 minutes.
Glaze while they’re still a little warm.
