Curry Garlic Buns

New spins on classic Caribbean flavors is my favorite way to cook. Curry is such a staple spice across the African diaspora and I love finding different ways to use it.
This is one of those recipes you can’t go wrong with. It’s a crowd pleaser or perfect if you’re in the mood to treat yourself to delicious freshly baked bread.
Ingredients:
For the Dough
¾ cup of warm (not hot) water
1 packet (2 ½ teaspoons) yeast
1 tablespoon granulated sugar
3 cups all purpose flour
1 egg + 1 egg yolk, whisked together
2 tablespoons granulated sugar
4 tablespoons melted salted butter
½ teaspoons Kosher salt
1 teaspoon curry powder
For the Curry Garlic Butter
1 stick salted butter at room temp
1 whole bulb of garlic
Olive oil
2 tablespoons finely chopped parsley
1 teaspoon curry powder
¼ teaspoon nutmeg
1 small pinch of cinnamon
Instructions:
1. Preheat the oven to 400 °F.
2. Using a sharp knife, cut the top (¼ of an inch) of the garlic bulb to expose the cloves. Drizzle the bulb with olive oil. Wrap tightly with foil and bake on a baking sheet for about 40 minutes or until the garlic is caramelized in color and soft.
3. While the garlic cooks, mix together the water, yeast, and sugar. Cover for 10 minutes and allow to become frothy. The froth/bubbles in the yeast mixture is how you’ll know the yeast is active.

4. In a large mixing bowl, add flour, egg, melted butter, sugar salt, and curry powder. Mix together finishing with the yeast mixture. Stir well.

½ teaspoons Kosher salt
1 teaspoon curry powder
5. Place your dough on a lightly floured, clean work surface and knead for 7-8 minutes or until you have a round, smooth ball.
6. Add your dough to a lightly floured bowl. Cover and allow to rest for 2 hours or until the dough has doubled in size.
7. Add your stick of butter to a small bowl. Remove the garlic bulb from the oven and squeeze garlic cloves into the bowl. The garlic should be soft and easy to mix into the butter. Season the garlic butter with parsley, curry powder, nutmeg, and cinnamon. The butter should be spreadable but not melted.

1 small pinch of cinnamon
8. Punch down the dough and divide it into 5 equal sections. Form into round, smooth balls then cover with a towel and allow to rest for 10 minutes.
9. While the dough rests, butter your bread pan and preheat the oven to 350°F.
I used my Our Place Loaf pan – it’s the perfect size for this recipe!
10. Working one at a time, roll each ball into a long oval shape. Spread a layer of the curry garlic butter onto the dough then cut long thin slits into the oval, being careful not to cut all the way through. You may have some extra butter, be sure to save it.
11. Form the dough into a knot. To do this, fold the dough in half vertically. Once folded, hold one end of the dough steady with one hand, while the other hand twists the bottom a few times in a row. After twisting, tuck the dough into itself to make the knot.
12. Place each knot onto your buttered loaf pan. Cover dough one more time and let the rolls rest and puff up (about 15 minutes).
13. Brush the dough lightly with an egg wash and bake in the oven for 25-30 minutes.
