Inspired by Elote, one of the best dishes of all time, this is easily the best dinner recipe I’ve made this year. After serving it twice in the last week, there’s a debate with my friends on whether it’s a soup or stew. From my view, it feels most like a version of pot pie where sweet corn is the star ingredient. I’ll let you guys be the judge!
