The Salad Made For Summer
My love for pickles knows no bounds, and this week I did something new by pickling one of my favorite foods, summer peaches.
Using fruit in salads is one of my favorite ways to add a bit of natural sweetness into every bite, but pickling these peaches added something even better, sweetness plus an unexpected tang. To do this, I simply let the peaches and thinly sliced red onion soak in the honey vinaigrette I made for the salad. And honestly, I don’t think I’ll be going back to making salads any other way.
This summer panzanella is built on juicy peaches, plums, tomatoes, sweet pickled onions, creamy mozzarella, and homemade sourdough croutons. It’s simple to make, preps beautifully ahead of time, and is officially going into my hosting rotation.
